The Office of Dairy Governance presents its Q3 Melt Performance Review. Overall, melt was delivered within guidance, and in some cases on the burger.
| KPI | Target | Actual | Status |
|---|---|---|---|
| Average time to melt | 38 sec | 41 sec | Directionally green |
| Edge-drip incidents | Fewer than 12 | 12 | On target, technically |
| Cheese coverage | 92% | 88% | Reframed as “intentional negative space” |
| Stakeholder sentiment | Positive | Hungry | Under review |
Key learnings
Pepper jack outperformed on heat but exceeded its risk appetite. Provolone stretched further than any slide we presented. American cheese met every target and has asked not to be mentioned in the press release.
Q4 outlook
Melt remains our north star. We will pilot an agentic melt monitor, add guardrails around the griddle, and continue to treat warm cheese as a strategic asset rather than a temperature.
