TL;DR: We rated eight cheese types across five mission-critical metrics. American cheese leads on melt. Brie leads on risk. Every decision path ends with the Emperor, as governance intends.
Cheese is the most under-governed layer of the cheeseburger stack. As we move toward an AI-native, agentic ordering experience, the Office of Dairy Governance has built a single source of truth for cheese selection, grounded in our proprietary melt data and reviewed by a human in the loop who was available that afternoon.
1. The Cheese Matrix
Each cheese type is scored 1 to 5. Higher is better, except Governance Risk, where higher is a meeting.
| Cheese type | Meltability velocity | Pull-to-stretch ratio | Stakeholder sentiment | AI-readiness | Governance risk |
|---|---|---|---|---|---|
| American | 5 | 3 | 5 | 5 (already a uniform data format) | 1 |
| Cheddar | 4 | 3 | 4 | 3 | 2 |
| Swiss | 4 | 4 | 3 | 4 (pre-tokenized holes) | 2 |
| Pepper jack | 4 | 3 | 3 | 2 | 4 (unplanned heat) |
| Provolone | 4 | 5 | 3 | 3 | 2 |
| Gouda | 3 | 3 | 4 | 3 | 3 (smoked variant requires review) |
| Brie | 3 | 2 | 2 | 1 | 5 (rind ownership disputed) |
| Blue | 2 | 1 | 2 (polarizing) | 1 | 5 |
2. SWOT Analysis: American Cheese
| Factor | Assessment |
|---|---|
| Strengths | Fastest melt in the portfolio, perfectly square, aligns with the bun without a change-management plan |
| Weaknesses | Perceived as simple, which we now consider a premium positioning |
| Opportunities | Market validation from the Hawthorn case study: the cheeseburger made for Margot in The Menu used American cheese and outperformed an entire tasting menu (see our competitive analysis of The Menu cheeseburger). We intend to upsell this insight |
| Threats | Any guest who orders it and simply enjoys it, undermining our roadmap |
3. Cheese Selection Decision Flow
- Does the burger require cheese? If no, open a ticket explaining why. If yes, continue.
- Is the cheese square? If yes, proceed to Meltability Review. If no, proceed to Shape Exception Review.
- Does meltability velocity meet the quarterly target? If yes, request stakeholder sentiment data. If no, request a melt remediation plan.
- Is stakeholder sentiment above threshold? If yes, run an AI-readiness assessment. If no, schedule an alignment session.
- Do the guardrails permit this cheese? Regardless of outcome, attach the result to a slide.
- Has anyone said “brie”? If yes, freeze the workflow.
- Escalate to the Emperor.
4. Next Steps
This framework will be embedded into our agentic ordering flow next quarter and audited for workslop. Stakeholders with feedback are encouraged to submit it as a structured cheese request. Until then, the default is American. It always was.
